Default Clutch Problem HELP

I just traded for a 1987 GT. It is the 5th mustang i have owned. The car is in almost perfect condition. It is all original with just over 100k miles. The motor was just rebuilt and was told a new clutch was installed but... I am having some clutch problems and before i tear into it i was wondering what you all think might be wrong. There is very little clutch pedal. As soon as you start letting the pedal off the floor it starts moving and feels like the clutch is out of adjustment or somthing. also when shifting gears it will grind. I think the clutch is not all the way ingaging. Basically you have to dump the clutch style driving to pull out or it will die. Do you think an adjustable quadrant kit would fix this problem or is it somthing more serious. any help would be greatly appreciated. thanks in advance

If the flywheel was resurfaced it may need a shim. I know that will cause some grinding.

most likely a cheap reman flywheel was used, I had a similar issue with my 92 after installing a 45 dollar reman flywheel, I removed it and installed a new one and cured the issue
