I am building a 302 and do not know what to use for heads and carb or fuel injection. I plan on driving the car daily and going to the drag strip on the weekends. I am going to go with cast iron heads, but are 1.94/1.60 valves with 69cc (combustion camber) better for street and drag strip on weekend or are 2.02/1.60 valves with 64cc (combustion camber) with 180cc (intake runner) or 2.02/1.60 valves with 64cc (combustion camber) with 200cc (intake runner)? I plan on putting the engine in a ranger and want about 375 rwhp with the engine being reliable. Also, should I use carb or fuel injection?

You are asking to broad a question. The answers are much more complex than you may think. 375 rwhp is a tall order for the little 302 but cetainly not impossible. Carbs normally make more top end power because the fuel is better atomized when it hits the combustion chamber. Is it the best choice? Not for a regular daily street driver. Figure out where you realisticly want your ranger to run and build around the ET you want to run remembering to be realistic. If you want your daily driver and weekend racer to run low 10's N/A and be a durable daily driver thats unrealistic out of a 302. Power comes at a price. Monatary and durability.

Even if a daily driver, today's carbs perform and have characteristics of a modern fuel injected car.
Cold starts, missing and common internal vacuum leaks have caused Edelbrock and other Carb companies to completely revise the internal infrastructure of carburetors.
In with how clean they look, my next build will be one....
Your gonna need a 347 stroker package.
You might get the HP, you aint gonna get the torque with just 302 cubic inches.

I have been reading i bought four books and just all over the place. Does anyone know where to get a stock rotating assembly for the 302 and does anyone know where i can get new GT40P heads with 1.94/1.60 valves?
