Default Heating Issues on new motor?

I just finished my 347 stroker motor. It has some trick flow heads,trick flow cam,edelbrock intake,aftermarket fuel pump,42lb injectors,aeromotive fuel rails,high flow water pump,electric fan,cobra 3 core radiator. I fired the car up today and was checking it over before it goes in for the chip and dyno tomorrow, if your driving the car it stays around 180-200 but once you start sitting it has reached 240 I'm not sure if this is a issue I can fix or if the chip will help this issue?

chip won't help, your clutch fan may not be working, or better yet what are you using to cool it??? stock clutch fan?? or elec cooling fan??

you might need to get a bigger rad to cool all that new stuff

It currently has a 3 core ford racing cobra radiator.

My thought process to the chip helping would be fixing the air/fuel ratio, I'm unsure wheter the car is running lean or not.
