Head choice and porting stages?

Head choice and porting stages?
Ok, I'm going to be getting a set of Windsor Jr. heads for my Mustang and I have a choice of two different sets, each are the same cost.
-First set has stage 3 race porting and polishing and have been milled. One negative to these is that when the porting was done, apparently there was one area that was hogged out too much and one of the push rod galleys had to be sleeved. The heads have been run for 10k miles without a problem.
-Second set has stage 2 porting and that's it.
The price is right on the heads so I'm leaning towards the second set. Would there be any concern about the push rod galley on the first set? Also, can someone tell me the difference between the stages of porting?

you can't go wrong with a custom cam....I know they cost more but the valve events are taylored to take advantage of your combo as a whole....where as a ots cam is a generic one size fits all deal that give average performance
