Question Mustang build-up suggestions?

Hey guys,
I am looking for some suggestions and tips to help me out while building my mustang motor. Looking for decently cheap improvements, while not going overboard with the engine.
So here's a little about what I'm doing:
I'm a second year college student, taking automotive trades. For class I have to tear down and reassemble a motor. Like i said, I'm a college student and am doing this for class, so only looking to spend $800-$1000 in parts. I just want something fairly simple, I'll do other mods down the road. I've recently turned away from imports to come over to the horsepower side, So I'm not a motor wizard.
Here's the Car:
Its a 1989 Ford mustang GT 5.0 5 speed. Pretty much most stock except a set of shorty headers.

What I've planned so far:
Bore out to a 306
Possible cam?
Aftermarket mufflers (not decided on brand yet)
New pistons & rings(of coarse)
New head Bolts
Gaskets all around


Any information / Suggestions / Tips would help out greatly

I would go with a good piston with the big valve reliefs and something lighter than the stock forged slugs. Also some arp rod bolts.
