A 195 puts my needle 2 hash marks from the bottom.

The winters are mild (30 to 60 degrees) here in Lubbock, Texas, but I like a warm car in cold weather. It can get cold sometimes. But it does get very hot in the summers here. I am conflicted between a 180 and a 195. Is the 195 going to be ok in the hot summertime? Will it allow the engine to stay cool in stop and go driving with the a/c on? Or would the 180 be better for that?

It's not that critical. You're making more out of it than need be. Put a 180 in it and be done.
