First off, and not to be a dick, don't use all caps. How's the power with the car (is it normal) you could have a blown head gasket if it feel weak. You also didn't mention if you had upgraded the radiator or not, the stocker could easily be clogged, and so could an aftermarket three core aluminium one. Also I would check and see if my radiator hoses were collapsing on you, silicone ones are a good upgrade. And running without a thermostat can lead to other problems since the car doesn't heat up properly. Also the gauge could be lying to you.

-head gasket blown
-radiator clogged
-possible hose collapsing
-bad sending unit/gauge

put the thermostat back in Captain Caps Lock

and out in AZ it would be a good idea to run a 60/40 water/coolant mix
