Question A/C question

So I am just getting everything together to replace the heater core in my 1987 Ford Mustang. I have read a lot about this job, but one thing that is always missing is how to discharge the A/C system. I know its illegal to do on my own, but if I were to do such as bad of thing as this what would the steps be.

Thanks again for any help.
