Right now my speedometer doesnt work (maybe he just didnt hook it back up?)

Speedometer cable attaches to VSS on drivers side of transmission... check to make sure its connected. If it is, disconnect it and make sure the cable core is actually in there.
If yes on both accounts. remove the VSS from the side of the trans, inspect both the gear on the VSS and the gear inside the trans (take a flashlight). If all is good there, you are going to need to take the dash apart to remove the cluster... which is a totally different thread.

Fuel issue: you need a new fuel level sending unit.

Adder is correct, but I would also like to point out that your particular issue with the fuel gauge leads me to thinking you will need a new fuel tank as well. Sounds like the baffle broke off and bent your sending unit, causing the drastic changes in gauge activity.

The plastic gear on the end of the cable could be worn out too. I have seen this happen. You should be able to pull the cable from the transmission and spin the gear and see a little movement of the speedo needle, if not, then you know the problem is between the cable and speedo head, if not the speedo head itself.

in my experience, that is the issue 9 of 10 times

when you check it out and if you need to replace it... make sure you have the right one to begin with. gears and year of trans will tell what u need. aod are all 8 tooth tho...... 5 speeds are 7t til 91 i think. then 8t after. but i can check for sure
