Ok....what the hell is going on?
So. I fixed the previous problems. The smoking was from a severely warped flywheel that was burning the clutch. Rear main wasn't broken but I replaced it anyways.
Also, turns out the waterpump didn't seize, the damn power steering pump AND smog pump seized. Easy fix and I changed the water pump anyways.
Well, anyways, in haste, my dumbass routed the belt so that I bypassed the smog pump but with the configuration I did, the waterpump was turning the wrong way causing overheating. Joy. I fixed this and now the car keeps overheating no matter what. I can see flow in the radiator but nothing. No coolant is hitting the ground, in the oil, or coming out the tail pipe.
What is going on? I pressure tested the Mishimoto Radiator that is in there and I can't get pressure out of it. There's a very audible hissing sound where the upper radiator hose is. There's also evidence of a leak, it would seem. Could this be the problem? I have a nice big Fluidyne to replace it with so I'll see if that fixes things.
Also, after having to wrestle with working around the fan clutch and such, I'm going electric. My first 5.0 already had this done and I can see why. The fan clutch just makes doing anything on the front of the motor a PITA. Only problem is I just keep seeing Mishimoto POS dual fan setups and overly expensive black magic single ones. Is there anyone else out there that makes a dual fan setup or a single fan setup that could handle let's say, a 650hp turbo 331 stroker? ;D Yes, a build thread will be coming to a forum near you.

Yes, the radiator does get really hot. I've changed the thermostat three times. My dad suspects a pinhole leak on the exhaust side. The car will go to overheat but then stop between the N and O on normal. If I go wot, it'll go down but when I start cruising it'll go back up high and fluctuate between the middle and near overheating.

Here's my thread for the taurus fan I installed on my coupe:

Radiator cap? petcock fitting? (trying to think of things that would leak, not allowing a pressure build) any drips behind below the water pump (weep hole?)
