Default Overheating issues are driving me mad.

So. After replacing my water pump due to a seized smog pump, I decided to go the shorter belt route. After the shorter belt, I started having over heating problems like you wouldn't believe. I followed diagrams that I saw on the net but using them caused the water pump to go backwards. O.o After getting an even shorter belt and running it from the alt to the waterpump then to the crank then from there to the power steering and A/C, the car ran cool like it used to in the AZ 110 degree weather...

Well, it did for a day. The next day I got up and the car went back to square one. It started getting hot driving to work but it wasn't necessarily overheating. It was just between the N and the O on normal. And on the night time drive from work back home, the car overheated completely but would cool down significantly if I went WOT for two to three gears. It'd go back to getting hot after a little cruising though.

What the bloody hell is going on here? Water pump is new, fan clutch is new(Though I'd like a dual electric fan setup that isn't mishimoto if anyone can link me), thermostat is new, and radiator is from my old car but is a sturdy Fluidyne. I'm at a loss. I'm not losing coolant at all and it's not falling to the ground. No smoke whatsoever either and the oil is still fresh and not even mildly milky.

What do you guys think? If it still does this by Saturday after I change to a 180 t-stat, I'm just going to do the head gasket since I'm off. Just wondering, since I bypassed the smog pump, should I do anything about the lines that run to the back of the heads and to the exhaust? Could these be causing my overheating?
