Default unable to keep cooling temp down

I recently blew chunk of the block off of the one that came with my 89 5.0. i replaced the block, rebuild to a 306 and converted to carb. car is running better than ever. only issue is that i can not make the car run any cooler than normal operating temp. i'm trying to keep it at 180 or below but need tends to stay half way on the stock gauge (around 210*). i'd prefer to keep temp down cuz it hits triple digits where i live. i added a electric fan that i have wired to run off the ignition and stay on at all times as long as the key is in the RUN position. i don't know what brand the fan is and i don't know the cfm on it. i have an aluminum 1 row radiator.

i am not running thermostat. if i run a thermostat the temp go higher.

How much of the radiator does the fan shroud cover? I'm willing to bet it did not improve temps because it isn't a proper fit.

Also, make sure you're coolant is filled up all the way. Low coolant levels makes a huge difference. You should always run a thermostat...

How large is your radiator? It's not much but over boring will make the car run a little bit hotter..

its a 14 inch fan. coolant is filled all the way with 50/50 anti-freeze. so you suggest to get a better e-fan? i want to upgrade to a taurus fan but what year should i look for?

before the block change i was able to keep temp at 180 - 185 even in traffic with same radiator and same fan.

like TRexGAWD said, it could be the .030 over boring that i did.

i don't mind running at normal operating temp (210) but i'd hate to suddenly blow thru the headgasket. i've already had e7 heads milled to max.

would anyone know if its a good idea to put an pusher e-fan and a puller e-fan at the same time? or is it a waste of time?

Waste of time. These cars should always have a puller fan.

What's wrong with running at normal operating temp? If you are too cold your computer will keep the car computer in open loop.

30 over bore will not make your engine that much hotter. How much have you milled e7 heads? The more you mill heads/block the higher compression will be. Higher compression = higher temperatures.

If you're running no thermostat, an aluminum radiator, and a full-time electric fan, and the engine is still at 210, something is wrong in the cooling system. These engines have a hard time reaching 180 without a thermostat.

Plugged radiator, bad water pump, collapsing hoses... something is wrong.

what do you have your timing set at. Also you went to a carb so you need to be sure you have the mixture screws set correctly. If you took the carb out of the box and bolted it on chances are your running lean. A lean mix will cause a higher temp.
If you dont like running at 210 get a 180 stat and a 2 core radiator.
Honestly though the stock gauge is crap and highly unreliable for acurate temp readings get a set of after market they are far more acurate.
also you dont need the fan to run all the time they make a kit that you can adjust the temp the fan comes on at.
