Default which intake?

my wife wants to buy me an intake manifold for christmas (carb'd). i was looking at either the weiand stealth, performer rpm or weiand xcelerator. the car it'll be on only has the normal boltons.. headers flowmasters, h pipe, and holley.
what is the difference between dual plane and single plane manifolds?
thanks

i've been thinking of getting the stealth for the longest but i've heard nitrous prefers a single plane manifold (xcelerator) and that might be my power adder fo choice in the future.
