I concur with Viking396. I'd just make sure that I had a roller block to start with.
Carbed cars can run real well and the cost factor of a good carb/intake system is not 1/4 of what EFI is.
Use a 5.0 , not a 351W, it'll cost less.
IMHO, full lenght headers are the way to go.....
