You choose the size of engine you want to build and select a piston based on the desired compression. If it's a 302 stroker, it will be a flattop. If it's a 351 stroker, it will most likely be dished.

You need to know what your combustion chamber cc and compressed gasket thickness is too. The idea is to select a piston that gives you the CR you want with the other parts you're using. Smaller chamber and longer stroke = dished, larger chamber and shorter stroke = flat top or maybe apop-up.
