Default Help with custom cam build sheet

So I am helping my buddy do his engine right now. We were looking for a carbed H/C/I for his 302 capri. After finally convincing him to spend the extra dough for a custom cam I'm trying to help him with the build sheet. For a reference here is the sheet. Build Sheet. Most of the questions are pretty straight forward, but a couple I don't know how to answer. The sheet asks for tire size, and the rear end ratio, but I'm not sure what they're going to be. I was thinking seeing how the car drove and performed with the 3.27s his dad swaped in a few years ago, and then making an adjustment according to the gears we thought it needed. The tire size was going on how much tire was needed, he has a hook up getting MT tires from his cousin. If we could get good traction on an 275 ET street radial, then we'd go up in width, and rim size if we had to. The last part is where they ask for E.T., mph, shift rpm, and cross rpm. Do they want what the car does know, or what I think it should go? Why would how the car performs now have anything to do with it for this cam?
