Default heater core woes, still chilly

I just finished the dreaded fox heater core exchange (6hrs) and now that I finally do have questionable heat its only luke warm. I think I have the problem narrowed down being that it is only10-20 degrees round here and the fact that I only have a 160 thermostat which was what my chip upgrade called for. Question is if I change the stat to a 180-200 will it affect the performance of the car. As of now my temp gauge don't pass 150. Anyone have any input on this?

By looking at your mod list your running basically stock motor, if so then
there shouldn't be any issues with you changing to a 180.
