I would get 4!
If your working on just the front or rear you could get away with just 2, but sooner or later you'll want the whole car off the ground so that you can work on something and then you'll need all 4.

You will eventually need 4 stands.
However if you use all 4. Place at least 2 under the suspension.
All 4 under the frame, subframe, pinchweld is bad news. The body will not always flex and load the 4rth stand which can be dangerous.
Careful when using the stands under the front control arms. When the front wheels are dangling the arms swing down. You place the stands under them and lower the jack. Now the arms will spread outwards and slide on the stands.
On low cars like our Mustangs it can be difficult to get a jack under the crossmember or rear differential. Especially if you've already jacked up one end. I find it easier to drive up onto a couple pieces of wood, just for a bit of clearance.
