Default is 160 degree thermostat too cold?

never drove the car in such cold air before this winter, and i realized the car never gets above 170*. i figured this was my reason for the car eating gas. should i change it out for say a 180?

the problem with a 160 stat is often with a well cooling radiator such as I have it keeps the car to cool and car runs in open loop, not sure if it's true or not but I read somewhere I believe an article titled "eec iv inner workings" the eec iv often won't enter closed loop until 140 ish.?? , i'M HAVING A SIMIALAR ISSUE AND WHEN THE temp gauge is 140-150 car develops a lean pop/hesitation on light cruise/ acceleration, if it's at 180ish car is fine all day long but ect is only one input ecm looks for , for closed loop transition , here read this:http://www.veryuseful.com/mustang/te...InnerWorkings/
