Default Your Opinion on a Few Blocks

I'm trying to determine the difference between a few engines and which would be better for a 1966 Coupe I recently bought. The car currently has a 1980 302. What I know about it is that it has an edelbrock efi Pro Flo unit, High lift Cam, MSD, Headers, 9" Posi rear end, 4 wheel disc, and all re-done suspension. The motor dynoed at 185 HP and 225 ft-lb to the rear tires. I may have the opportunity to pick up 2 more 302's. Haven't seen them yet, but one is a 1992/1993 and the other is a 331 (Don't know the year yet). I know the 1980 that's in the car is probably not a roller (Really don't know the difference between a roller and non-roller), so I'm not sure if the newer one would be a better option or even the 331. Wanted to get your opinions. Please give me the pro's and con's of each, and what the differences are - especially between the roller and non-roller. Can I use the current Edelbrock Pro Flo EFI on the roller block or a stroked 302?

Flat lifter, roller lifter. Roller is better. 331.6 is a 4.030" bore and 3.25" stroke 5.4" rod. How it is fed fuel is up to you.
