and the more thought i put into all of this, im starting to wonder if my new head gaskets blew so quickly because the heads were milled, and we still used a standard size thickness gasket instead of compensating for how much was actually milled. i think the gasket thats on there now is either 39 or 40 thousandths. maybe i should just go with a 45 thousandths to be on the safe side this time

The problem with the milling is that it decreased the head thickness and makes the heads much more prone to warping (bowing).
Although, I'm wondering why he even had them milled in the first place; especially that much. If anything you'd want to leave them alone, it's not like you're trying to raise the compression.
