I use mine as a DD and went with 3.55. It seemed the best of both worlds. When I test drove the 3.73 it seemed to be running out of gear too quickly for my taste. I think this question is pretty subjective, there is no all around perfect gear. Just get the one that suits the way you intend to use the car.

That "turns off" both the traction control and the stability control.
Those can be switched off individually too.

Correct gears...?
Doesn't the GT Coupe Premium come with standard 3.35 gears? I have the GT Coupe Premium with the Brembo Package and according to paperwork unless you choose the optionals 3.55 or 3.73 the GT comes with 3.35...I can't wait to upgrade mine to 3.73!!!

For those of you who want to know about being able to hit 60 mph in 2nd with the 2.43 2nd gear and 3.73's . . . it's a VERY close call. As good as the information in the linked thread is, generally, it overlooks about a 3.5% correction that is due to tire tread compression as it passes through the contact patch. I get 7003 rpm with 27" tall tires @ 60 mph, so it could come down to "exact" tire diameter (including tread wear), or that the correction for a given tire could be either a little higher or a little lower than 3.5%. Best to use rpms/mile as provided by the tire mfr, actually.
The highway rpms would be 3.5% higher than shown (if that really matters to anybody).
