Did the addition of the bar change the feel or ride of the convertible? I was reading that it will help some, not sure about that.

Wind screens help, unless its an actual roll bar it shouldnt change the ride quality.

I have also read online that it is supposed to marginally add stability but I don't "feel it".

Not a functional roll bar. It bolts to the A pillar (I that is that he called it)

I've been toying with the idea of getting one of these, mostly because then I can put the screen in it for cooler weather driving. Gets kinda chilly when the temp drops below 65, especially if the sun is down.

It was 68 this AM when I got up. I needed donuts.

Oooo donuts the bar I have is the least expensive one. Made by MMD. If you read through the user comments on American muscle dot com, many say the wind screen is not a perfect with this bar. If you do get one, read all the comments as some people did get it to work. I have talked to Shelby owner that had the bar / screen set up and he loved it (though his was the name brand one from CDC with the brake light in it)
