Default GT-40 Head ?

ok so if i got some gt40 heads cast iron ones and i had them milled down to a bit to reduce the size of the combustion chamber would i need to get valve notches i my pistons its a 289 BTW

I doubt that you would need to, unless you installed a very long duration cam.
Rig up a pair of solid lifters and do the clay test on the piston just to be sure.
