I have an sct 4 bank chip in my car and a 7 slot switch for it so numbers 5, 6 and 7 have no tune and the car wont stay on with those settings . Of course anything IN your car can still get jacked.

I did something similar to that with a Dodge I used to own.
I put a kill switch in that disbled a "Run Line" to the ECM.
Car would almost start but not quite.

I used a factory fog light switch and mounted it right on the dash in the stock location because my car did NOT have fog lights!

Of course like you say, they can jack anything in the car.

I've never worried about my vert any more than I have any other car. Get an alarm and keep your stuff out of site. Most window bashers are just after what they can see. Tint your windows and keep what you can in your trunk.[/align]
