5w30 is the weight of the oil (think of thinkness or viscosity) Back in the old days all there were were straigh weight oils (like 30w, 40w, etc.) The multiviscosity (like 5w30) would be a 5 weight oil that would not thin anymore than a 30 weight oil when hot. The "w" just means the oil meets sae specs for a suitable winter oil (hence the "w"), virtually all multi-viscosity oils are "w" now.
Basically, the lower the weight, the thinner the oil. Today's engines are built to much tighter clearances than the older engines, so the thinner oil is more suitable. Also, thinner oil sucks up less power than the thicker oils. Try putting 20w50 in your car in the winter instead of the recommended 5w30, and see how much harder it is to start and how much slower it turns over.
Basically, always use the manufacturer's recommended oil. You see alot of older cars still running 20w50, but thats because the bearing clearances aren't very tight and running something like 5w30 would cause the oil pressure to drop and sometimes keeping 20w50 in those higher mileage engines will help prevent blowby (smoking).
Also the lighter the oil, the better the protection is (generally). Damn I dunno why I just typed all this crap, bored I guess - the wife is off getting some food.

Cause they won't stay the same with heat, it's just physics. 10-30 is good for your engine, I wouldn't go higher unless you're having pressure problems and you shouldln't need to go lower.
