When somebody buys a new part, say a new hood, and has it installed, do companies usually give a trade value for the stock part? Or do you pretty much have to take it home with you and sell it yourself if you want any money from it?

Take it home. You may be able to sell it for a little to a junkyard but eBay is probably the way to go.
