I'm not sure the steady rate of my mustang, but I'm guessing its similar... My jeep settles right around 210 F

Which part you painting? The heads will get quite a bit warmer than that, especially by the exhaust ports.

Just use engine enamel and you'll be fine. If you want to paint the headers/manifolds, you'll need the ultra high heat stuff as well as a lot of prep work to make the paint stick. Both my current street engines have painted headers and they look good even after a few thousand miles. I used DupliColor for all the paints.
