2000 GT hesitation when starting off the line

Update:
I bought a fuel pressure gauge (gotta love harbor freight, $15) and found that I had 27-30 PSI. So I replaced the fuel pump with a used one and now have 37-38 PSI. However, the problem still exists. My next step is to move the coil pack from #8 to #5 and drive it a while. Then I'll pull the #5 plug and see what I've got.

But when I pulled #8 it wasn't fouled at all, but there was that pool of coolant in the spark plug well again. I think that is the problem. So, I ran it with the #8 coil pack disconnected and it ran about the same. Then I reconnected it and disconnected another and it ran worse. So I'm thinking I need a gasket and a coil pack.

I replaced the faulty coil pack and it is running much better. The miss is gone, but it still isn't quite right. It is a beast off of the line, but when you get into the higher gears it lacks any real passing power and breaks up at no set RPM range.
