In New Jersey they only have to give you fair replacement cost of the car. You have the option of buying the car from the insurance company for $400-500. Do that and install all your parts in another mustang.

I might cut my loss. I really don't know if I want to spend the money on a mint fox body. I don't want to deal with rust again, or restoration. I want a turn key, something I can mod, not fix. Those cars seem to to be out of my price range. I planned on spending no more than what the insurance gave me.
Good news though I have a possible buyer for my trans set up and possibly someone who wants the body as a roller.

You could also offer to buy the car back from them, see what price they give you.. if you can get alot more for parting it out and selling the body as scrap then it might be worth your time. I bought a totaled motorcycle from the insurance company i hit a deer with. I paid em $90 and turned around same week and sold the bike for $300

Exactly. They owe you cost of replacement for the car lost. Start doing some digging on similar modified T Top foxes and get them printed off in hard copy. The more info you arm yourself with, the better off you'll be.

Wait to see what they come to you with. Don't be affraid to say 'No' and hire legal representation.

I've had to fight with insurance companies a lot on rare cars. They know what they owe you, but will try and low ball you hoping you don't know the laws they have to follow.
