I'd start with suspension and brakes. The factory rubber bushings wear out pretty easily, and you're better off replacing the control arms and strut mounts, rather than just replacing the bushings in them.

Would strut mounts have been replaced with new struts?

Not unless you requested for them to be. But on a strut car like the '01 GT, a worn out strut bushing introduces all kinds of front end slop.
