Default 20" Wheels with Steeda Springs

Steeda drop is 1 inch front, 1 and 1/4 rear. Would 20s with 255 tires rub?

You need to give more info. Tire size is not measured in two dimensions alone--if you ran 255 with a 75 aspect ratio, you'd a.) look like a foolish GT/Rock-crawler crossover, and b.) almost certainly rub. Then again, if you ran a 30 aspect ratio, you'd look like that rare exotic critter, the "rubber-band" low-rider. Depending on the aspect ratio, you could end up with a wheel/tire combo that closely matches the diameter of the OEM set up (with minimal or acceptable width differences). So what aspect ratio are you looking into?

If you're not familiar w/what "aspect ratio" means, you should fish around Tire Rack's website and read every tech article they've got...everything. Become minimally knowledgeable about the modifications you are considering, don't just do things to look "cool." Not that looking cool is a bad thing, but it's not the thing to live by.

Here's the easy way out: Steeda runs this wheel, and I'll bet they're running something like a 255 tire, so find out what they run (I'm guessing 255/35 or 255/40). Never underestimate the power of what has actually worked.

I would go with a 275/35 on a 20 inch rim. That's what my Saleen has and I think the overall diameter of the tire combo is like a 1/4" from the stock GT profile. I think the only issue you will need to deal with is the wheel offset, which will determine how the wheel sits on the hub.
