Jeez, that is a lame statement. (the post) You can make it sound however you want.
Between the cam choices, Header options, x or h, exhaust, cats or no - you have a slew of options to make it mild to the wild. I have heard S197's sound like a ford escort and I have heard some sound like a freakin' dragster. Saying 'muscle car' sound is also an understatement because not all muscle cars sound the same either but rest assured, whatever sound you want the car to have - it can be done.

I own several muscle cars and I think Ford has done a very good job with the sound through the years with the 5.0 and the 4.6.
I'm not sure which gm's you've been listening to, but compared to Stock L98, LT1, LS1, LS2 Camaros and Vettes, the Mustangs have a much more aggressive and deep sounding exhaust. There may be a few exceptions that sound aggressive, like the final SS camaro, but not many. Don't get me wrong, I know they make plenty of power, but they don't sound as good.
I was at Corvettes at Carlisle in august and Borla had a install shop set up at the show. People were shelling out $$$ all day long having new exhaust installed. All that $$$ and I still don't think they sound any where near as throaty as the stock mustangs.
Ther are reasons for this too. Climb under most GM cars and look at the exhaust. Single pipe in the middle, Split in the back. My 89 Corvette has 3 cats!

I think the new Mustang GT's sound damn good stock. I had a 68 GTO, 400, 3 speed, and the s197's sound very similar. I'm not changing a thing in the exhaust. The 06 GT is faster than the 68 Goat too. I loved my GTO, but the s197 is a much better car overall, and FASTER, stock anyway.

I noticed the O/R H gives a nice deep sound with the stock mufflers.... thats prob the setup im goin for..... u can also change the cams which will get deeper sound....

Been there, done that! Not on a Mustang, but on a sixties car that I built. I learned the expensive way that using pipe that is too big will make it snap and pop. I don't know any other way to describe it, but I know that it was a BIG mistake. The 2 1/2" pipe size is ideal for this size engine. If you go hog wild, like past the 600 HP mark, then the 3 inch pipe would probably be okay.
I very much agree that the S197 GT has a GREAT sound as delivered. The vast majority of aftermarket exhaust systems or mufflers of today, are almost always louder and they almost always make a sharper sound and lose mellow tone that I listen to every day. Yes if mine were louder I would like that AS LONG AS it was still mellow and the tone did not sharpen.

I guess it's all about preference, I think my stock Saleen/Magnaflow sounds perfect, not too loud not to quiet, but if you read that exhaut article and how the sound is made or changed (5.0 or MMustangs a couple months back), one of the biggest difference with S197 cars and the older models is there is no tailpipe after the muffler. The Fox bodies had a 1-3 Ft. length of pipe after the muffler, that helped with the thoatyness. Then the H pipe vs. X pipe controversy, which it seems like the H pipe with a good crossover will help with throatyness.
And I agree on the Chevy/GM stuff. most of their cars sound tinny at idle or low throttle. Look out if they open them up though...
