39lb injectors?

The problem is that without active tune switching, you could end up in a situation where you're out of METH, but are commanding the timing that you'd normally need meth to run. Thats why, at least on the stang, I'd use it for it's cooling purposes more than for its octane increasing properties.

The fuel options are the part that really sucks about living in a town of 800 people. No one else here needs fuel higher than 89oct so you just can't find any better anywhere. Guess I will just have to leave some power on the table with the lower oct. gas. What do you think I can push the car to with the gt500 pumps 39lb injectors and the T70 without having to worry about buying a bottom end for a year or so?

As far as injectors go. Keep in mind brenspeed sells a stage 4 twinscrew (saleen) with the 40lb. injectors. 580 flywheel horsepower. They include the GT500 fuel system with that one. Stage 3 has a BAP - same injectors.
Kenne Bell includes the same injectors on their stage 1/2 kits which are also 500+ flywheel horsepower.

Really can't tell you how much the bottom end can take. Mine blew at 435 crank hp. JDWalton is pushing over 500 wheel horse power on his stock bottom end and still going strong. The point is you just never really know. Most people say ~425-450 wheel HP is the limit. I agree, but that also depends on the RPM's you're running it to, and the frequency that you're really getting into it.

39s will be adequate.
The problem with E85 is that you'll be filling up daily. There isn't much energy in ethanol, compared to gasoline, so you end up using it at super high rate.
Honestly, if you can't find 91 locally, maybe you should put off your plans until you move out of nowhere.
