It's not so much that as it is that safety requirements are getting stricter and stricter.

Here's a 1969 Mustang's exterior dimensions
Wheelbase: 108"
Height: 50.3"
Width: 71.8"
Length: 187.4"
Weight: 2980-3910lb.
Compared to a 2010 Mustang's exterior dimensions
Wheelbase: 107.1"
Height: 55.6"
Width: 73.9
Length: 188.1"
Curb Weight: 3533lb.
As you can see, despite the 2010 Mustang being marginally larger, it weighs over 500 lbs. more. Even after 40 years of developments in technology, the newer Mustang still comes in at nearly a 1/4 of a ton heavier. Stricter safety requirements can be directly attributed to the cause of the Mustang's weight gain.

The way the U.S. industry is going for cars you better drive one while you still have the chance.

Just read on page 60 in Automobile magazine, "2011 ford Mustang GT An all new, 5.0 liter v-8 for 2011 should exceed 400 hp and 400 lb-ft. It's mated to a six speed stick." Wow how many bucks will I have to shell for that. Not even going what I think of the new S-197 looks.
