Default 65 mustang over heating

I realize this question has probably been asked a million times but here goes . I recently completed a drive train swap in my 1965 fastback 331 stroker 405 hp 375 ftlbs of torque at the crank new champion 3 row aluminum radiator 180 degree T stat 50/50 dex cool distilled water coolant with a bottle of water wetter stock 5 blade fan high flow shroud w/ air conditioning . At normal driving I am fine but in stop and go traffic I am almost kissing the H on the stock temp gauge but not boiling over thinking about a clutch fan or electric fan conversion
any suggestions would be greatly appreciated thanks

Its possible you may need to get a bigger fan, with the higher HP might help, plus I was going to say get a shroud but you have that, maybe a spacer if The fan is more than an inch from radiator. easiest test is to simply remove the thermostat and test drive the car. It will most likely run cooler, and if it does, then it's telling you it was the T-stat stuck shut. Hope that helps, I don't claim to be a big gear head but grew up in 60 & 70's

Welcome to the forum.

I'll add that you may also verify the accuracy of the gauge with a IR thermometer. Just to verify exactly how hot it's getting. Stock gauges aren't known for being that accurate.
