My corned beef is in the slow cooker. Cabbage goes in for the last 2 hours. Mashed potatoes on the side. Maybe make the mashers into cole cannon (mix cabbage in with the mashers). I'll decide when I make the mashers if I'm feelin' it.

See how the day changes your mind's taste buds? I thought I'd do mashers this morning, but kept the potatoes whole. Lazy? maybe. But the whole taters looked so good in their corned beef Jacuzzi, I didn't want to change that.
....and yes, I had a 50/50 yellow mustard and horseradish on the side. And a good roll. I don't really like traditional soda bread.

There isn't actually such a thing as baby carrots. They're just regular carrots.

I love corned beef and cabbage left overs. I sliced up the corned beef and sliced up the cabbage. Piled up some corned beef, cabbage and topped with Swiss cheese. Heated it up. Thousand island on a kaiser roll, piled on the coned beef, a good squirt of mustard. Best corned beef smmich in the WORLD!......and parts of Canada.
