OK, I think then I'll go with the 40 offset and 285/35 on the rear.

just to give you an idea, this is how 18x10 +45 with a 275/40 sat on my car at stock ride height, which will be pretty similar to a 285/35 on a 19x9.5 just to give you an idea of fitment.

Here is the wheel and tire info for what I am running:
Tire Size (front): P255/40R19
Tire Size (rear): P285/35R19
Tire Brand: Goodyear
Tire Model: Eagle F1 Supercar
Tire Type: Summer
Wheel Size: 19-by-9.5 inches front and rear
