Am I crazy?

^^ sounds like your in a similar position, my job is 100% secure, but my hours have dropped due to more employees being hired, I'm one of the best there and have worked there 2nd longest out of the 8-10 people. I'm also going to be working through school and would like to free up funds by getting a more affordable DD. I know I'll definitely miss it, but I think its a wiser choice.
I've had similar situations before, I had a 67 that I loved to death, but didn't have the funds to resto, so i sold and got a v6, then instead of buying a project car, i kinda wish i did, i bought the cobra. so im kinda going back to the thing I originally wanted to do, which is build a weekend warrior.

I would first go to your bank, and see if you can refinance the car, to lower your payment.
Don't take this offensively, but you are young, and I really truly believe, with all of my heart, that you are grossly underestimating what it would take, to convert a v6 stang into a Terminator, doing all the work in your own garage...
I'd just keep the Termy, but that's just me...

you are going to run into head-ache after head-ache, and you probably won't come out much further ahead if at all after you realize all the new parts you will need for the conversion.
