My 2015 GT rides on the 265/35 20's and I think it rides amazing. I'm happy with the handling on the new Mustangs, so if adding a thicker tire would make it ride smoother, that would be one impressive ride for a sportscar.
The standard 235/50R/18 tires seem to do just fine with 435 HP. Now with the supercharger's 670 HP they will obviously break lose more if I hammer it! I usually apply full power only after I'm rolling so that may not be a problem. At 670 HP, I may have to watch it when passing gear kicks in! If I need more tire, I'll buy them! Time will tell!
There's a HUGE difference between the crap all-seasons that come stock with the car and high performance summer tires. If I wasn't a cheap SOB, I'd have replaced the factory tires the first week I owned the car. The S197 was the same way, came with terrible all season tires from the factory.
Well, I know it's recommended to stay within 3% of the diameter/height of the original tire.
That's only to retain the accuracy on the Speedometer. If you have an aftermarket tuner with the Mustang you can program in what diameter tire you have and not worry about that. Put whatever you want on the car and enter the appropriate tire diameter and the speedo will remain accurate.
Personally I like some sidewall as the tire gives more predictably . If you have a rubber band, you are going to break traction without much warning. That's fine on the track, but on the street, I like some give before i just go careening out of control from a sweeping wide turn.

I'm cheap too! I only go fast in a straight line, & back off somewhere around the speed limit! I put my foot in it tonight & am wondering why I would put a supercharger on it! It will be hard to find a place to go WOT! Maybe I just want a Mustang GT that most other people don't have.... even if I don't need it! Hmmm!
