Leaking white fluid on driver's side, white flecks through defrost vent

I recently found out my head was cracked and had the head, the head gaskets and the thermostat replaced. The car was running fine and then I drove it for about an hour straight yesterday on the highway and it slowly started to heat up, never getting to red but still pretty hot. I was getting heat out of the heater though.
The next day within 10 minutes of starting the car goes over the M marker on the normal heat meter and while returning home on the highway I noticed white flecks coming out of my defrost vent. When I got home I noticed a milky fluid that had dried ashy that had leaked onto my driver's side mat.

I know this year is notorious for bad gaskets but I just had it replaced, so what is going on?

Could be another bad gasket? The only thing I know of that would be a white milky fluid is oil and coolant mixed maybe it was a bad install or just a bad gasket someone else may have a better idea but that's my guess

is it possible for me to install a newer head gasket? like an '01 or something?
