rebuilt 7.5 tlok
I am thinking of getting gears very soon and a local transmission shop happened to have a rebuilt 7.5 tlok on hand and would be willing to part with it for a low price as long as they are doing the installation.
I'm not really getting it so I can do lots of burnouts, I just want consistency with the rear wheel throttle control for handling and for in the winter.
Is there any reason not to use a rebuilt one?

Will they guarantee it?
The olny thing that wears is the clutch plates.
If they replaced them with true Ford parts and
not bargain basement parts, heck yes, go for
it as long as it is all guaranteed to work flawlessly.
Otherwise you are asking for trouble with gears AND
a rebuilt T-Loc at the SAME time.
There have been many whinning gear installs and
you are topping it off with a used T-Loc install as well...

It seems like a really good shop with a focus on muscle cars so I am more inclined to listen to what they say. As long as it is rebuilt properly and he is sure it will work I would feel confident.

9 times out of 10, that is.
Installed dead on or way out of specs, they whine and shell faster
than normal.
Properly cut gears made on $100,000 gear hob mackines to 0.00001
tolerances and properly heat treated and drawn will last for a good long
time when properly or nearly closely set-up.

As mentioned, if the 'rebuild' was just to replace the clutch packs, you might be getting a good deal. But check the internal gears, too, to make sure none of the teeth are chipped or worn; they can show it too you and show you the little internal gears.
Even if you do not get that one, get some kind of t-loc or something; prevent that one-wheel spin and possible spinning out on slow left turns on wet streets.
