see, told ya it should be covered. Only reason I said that was because I was having tranny trouble last month and they said the standard warranty was 5 year, 60K and i figured the odds of you buying it in January were slim to none...congrats bro I'm glad for ya

I don't know about the 7.5", but the 8.8 on my Crown Vic had a magnetic fill plug.
The only thing I have to add regarding the 8.8 swap is there is a detailed write up on another forum that I printed out and used.
Yes, the pinion flange is the only tricky part. I changed all the bushings to poly, which I would not do again because it was a pain.

Get a new mechanic.
The rear end does not have a drain plug.
If it did have one, it would not be magnetic OEM.
Did you actually watch him pull the plug firsthand
with your own two eyes and keep them on the plug
until the time he showed it to you?
Slight of hand is a mother forker most can master.
It seems he keeps a magnetic drain plug with grit on it in
his toolbox for people like you who believe everything they see...
My diff made noise at 20K. It was underfilled from the factory
as are most S197s.
I pulled the rear cover (the only way of draining it), reinstalled
the rear cover and refilled the rear diff with AMSOIL 75W-140
gear lube to the proper level (bottom of the fill hole).
The noise went away and has not reappeared since.
These rear ends are tougher than one might think.
A simple refill with 2 quarts of 75W-140 AMSOIL could be your
cheap and proper fix. Its worth a go.

Neither the 7.5 or 8.8 on the S197 has a drain plug. You drain the rear end for a change by taking the bolts out at the bottom and prying the cover out. The fill plug is on the back.
You only get a drain plug if you put an aftermarket cover on the rear end.

Dj you are correct sir. :P Even if it's not a magnetic fill plug, a tech always has a strong magnatic for testing. If I'm doing maintenance on these diff's, I just take the fill plug and I use a suction pump. No need for taking the bolts off. :P Assuming... why is the world always at wonder? :P
