Default widest tire I can run

whats the widest tire I can use on the rear on my 95 gt with 03 cobra rims and lowered two inches

It mainly depends on the rims size, google says that 03 cobra rims are 8" wide(there are replicas out there that are wider), so that means roughly a 255 tire would fit but it depends on the tire.
The other issue is rubbing, a 255 on your car could possibly rub, so a 245 or 235 would be more likely to not rub. I am not familiar with your car, so I may be completely wrong, but I generally understand that the sn95's dont have the clearance my s197 does. I know I can fit 275's on my rims so I would expect a 255 to fit without issues but again I don't know for sure.
When I went to discount tire for my wheels on my truck they made sure they fit and didn't rub before I paid, If you go to a shop like that I would imagine that they would have some type of guarantee so that if they don't fit they can sell you a smaller tire that will.

Ok then that means mine are definitely replicas because I have a 275 right now that clears (my bad I forgot cause I was in school) it would be nice to have a stock set of 03 cobra rims for the front to make them a bit more narrow and not rub my sway bar and inner fender plastic

yeah they probably are replicas, if they are rubbing then a skinnier rim would work better. You could probably do a quick google search, or check american muscle or other mustang websites and find an 8" rim.
On the other hand someone may have put 275's on a 8" rim, they would fit, just wouldn't fit correctly. If they are 8" rims they will fit a 255 no problem, and that would be cheaper than new rims. They would also fit 235's or smaller depending on the tire... I personally like wider tires to help protect the rim if they fit the car, helps keep curb rash to a minimum, but if they are rubbing then smaller would be better.

my rear tires are doing great but I'll definitely look for some narrower front rims cause I've got a bad ding in one of mine from the previous owner they still hold air but I want to have trusty set of rims to take corners at speed

Am I able to go to a 295's on the rear with the 2 inch drop that I'm working with or would I be better off staying with my 275's

You would have to look under the car to be able to tell that... 20mm is almost an inch, and it would be even on both sides, but with tire flex I would make sure there is at least 3/4 of an inch of clearance on both sides of the tire all the way around. I would imagine that 295 is too wide with the 2" drop, but again I might be wrong.
Like I said, go out to the car and check the clearance, check it with the car loaded as well because with a full load things change.

thanks for the help I'm sticking to 275's cause I looked and found no way to make it fit without modifications to the body

and I'm going to find some narrower rims for the front because I don't think I can go any narrower with the rims I have
