I think the latches just come unpopped over time. The housings are REALLY cheap plastic (the stuff they make sandbox pails for kids from is the closest thing I can compare to. Just sitting in the seat on a hot day when the plastic is soft would probably be enough to open them.

Back seat was easy. Maybe 2 hours for both halves.

Passenger side seat was maybe 4.5-5 hours (mind you I'm doing seat heater at the same time).

Drivers side is up to about the same and is 80% done, but I'm knocking off for tonight. My arms ache, and it'll still be here tomorrow night to work on.

Another tip:

If your car has power lumbar support, make sure you retract it so the back of the seat is as thin as possible before disconnecting power and removing the seat from the car.

I had to jerry rig a power supply to activate the motor and retract it indoors (after VERY carefully triple checking that I had the lumbar connector and not the airbag connector...)

Just finished getting the interior back together. It was too cold today to put the top down, but here are a few shots. The leather still needs time and heat to smooth out fully, but in the meantime, things look really good imho, and the heat seaters work really nice:
