one question it looks like the valve stem is resesed near the middle of the rim (depth wise)

could you snap a pic of how that looks (just courios if it has any chance of getting snaged on the calipers

There is no chance of that happening. If you go the Vossen site (link is under my siggy) and then click on the CV3 wheel and open up all the photos for it you can see some really good close ups of the stem and its relationship to the calipers even with big brakes and it clears them with out issue.
