You seem to pretty much have all the bases covered, you already know not to make in impulse buy and you already have the biggest approval in your fiance.
Start checking around local dealer websites and Autotrader (narrow the listings down based on your exact criteria, year, v8, auto/man, miles, price and color).
When you see something that you think is a good buy, check out the value online and let that help make your decision a wise one. Many times you will be able to talk a little off the asking price also.

Get the GT.. the v6 is great for someone who doesn't mash the pedal or care to go fast, but the v8's torque makes driving so much fun.
If it were me, i'd probably wait a year or so and see how much I can get a 2011 5.0 for... since they have over 100 extra ponies. You could do every bolt on for the 4.6 and still not be quite as quick as a stock 5.0.
The stock 4.6L is not all that powerful, needs another 50 hp, but i'm sure it feels way faster than the v6. I'm kind of spoiled cause mine came supercharged with around 400 hp. My roommate has a stock auto 2005 v6 so I know how that feels.

Dang it! Jas 5 lol now u got me thinkin about that. Those coyote engines are amazing. They get just as good of gas mileage as my 07 v6. I knew they had 412 hp but idk. I always look at people with a 2010 and wonder WHY?? Just wait another year and u could have gotten an amazing stang. V6 or v8

Boost your V6? I mean it is "yours" and you obviously take care of it, it appears to look good. I say hit up american muscle and find a good SC kit... like this

I think you would be happy with an 03-04 termi(I know I would, those things are sex) or an 05-09 gt. The new 5.0s are nice but I think you would enjoy either of the others I mentioned just as much for less money. You won't go quite as fast(unless you get an 03-04 termi, those things fly), but you'll have the v8 sound and they're no slouch at all.
