Yea OP just tear your car apart, take out the airbags, door panels, rear seats, passnger seat, radio, speakers, hood, bumpers, side skirts, and buy 4 spare tires to use and you'll be good to go in the weight department!

You need to read thru the forum's stickies and get familiar with the mods and TSB's associated with these cars.
If you were concerned about gas mileage then you should have bought a bike. There is no mod that'll save you more than maybe 1 MPG. A custom economy tune MIGHT gain you more than 1 MPG but then you WILL rather be riding a bike. Most custom tunes are for performance and won't gain you any mileage and, in all honesty, will reduce mileage a tad due to not being able to keep your foot out of it. Also, exhaust work from the stock Y-pipe (or X if you have the GT) gains sound only.
And if you buy a TB spacer, we'll all point and laugh at you.

I'm laughing right now at the attempt to transform a Mustang into a Prius.

If you want better gas mileage, change your oil regularly, maintain the proper air pressure in your tires, change the air filter, and fuel fitler when required, don't carry unnecessary items in your car, and drive no higher then 1500 rpms at all times. If you buy a throttle body spacer you need to be slapped, you can get the same hp and mileage gains from a sticker.
