RE: NOS for 2004 mustang GT
You mean NITROUS?
NOS is simply a brand of NITROUS, and only ricers call non-NOS brands of NITROUS NOS capiche'?
You can spray 100-125 dry safely. Wouldnt be a bad idea to get a few extras for some added protection. Such as a tune, window switch, that sorta thing.

If you want to keep some life in your engine, get a wet kit, and go for a 75 shot. The main disadvantage of the wet kit is that you can blow up your weak plastic intake manifold if you're not careful about using it. A 100 shot will be ok too, but you will need to back your timing down, and may want to consider some different plugs.
I can reccomend the Zex kit because it has everything you need to make it work, and the new kits have a fuel pressure sensor, where if your fuel pressure is too low it won't spray... definitely a handy feature. Install is also super simple... the instructions were a little vague in a couple spots (doesn't tell which wire to tap for the TPS etc... it assumes you know... by the way, it's the middle wire) but it was nothing I couldn't figure out with almost no automotive knowledge.
