Driveability Problem

Driveability Problem
I will try to describe the best I can what my car is doing. First here is what I know is done to the car.
302 bored .030 over (Mexican Block)
Edelbrock upper and lower intake
BBK Headers
Off road H-Pipe
3.73 Gears
Once the car is warmed up it will hesitate both at cruising speed (60-70mph) and when reving the engine up to around 3000rpm. It idlesand runs atWOT perfectly normal. I have replaced the spark plugs and the only thing that I noticed were a couple of cylinders running a little lean, a couple with a little oil on them but nothing major. After replacing the spark plugs it did the same thing. The engine was running at around 140 degrees so I replaced the thermostat thinking that it might have been stuck open but thatdidn't fix it. The next thing I plan on doing is replacing the coolant temp sending unit to see if that corrects the temp problem.
The problems with it started on the way home after buying it so I figured that I would contact the owner about the car. He didn't know anything about the hesitation problem and told me that the car always runs that cool. Well, for the street, I would rather the temp be normal as I have no plans on making this a drag car.
I was thinking that it might be a vacuum leak, maybe an EGR or quite possibly there is a chip in it (which I haven't looked for yet). Does anyone else have any ideas or are those the things that I should check first.
